Beef Seaweed Soup

A simple, comforting beef seaweed soup made with homemade beef stock, perfect for busy weeknights and always a favourite with my kids.

Ingredients

  • Homemade beef stock
  • Beef slices (shabu shabu or sukiyaki slices work well)
  • Dried seaweed (wakame/miyeok), soaked until softened
  • Beef dashi powder (adjust to taste)
  • Beef marinade :
  • Salt
  • Corn starch
  • White pepper
  • Light soy sauce
  • Sesame oil

Instructions

  1. Marinate the beef for about 15 minutes.
  2. Bring the homemade beef stock to boil.
  3. Add the soaked seaweed and marinated beef slices and let it simmer for about 20 to 30 minutes.
  4. Stir in the beef dashi powder and adjust the seasoning to your taste.
  5. Serve hot with a bowl of Calrose rice.

💜 Tips for Kids

Use homemade beef stock if you can. It gives the soup a naturally rich and milky flavour, so you won't need many seasonings.
Slice the seaweed into smaller pieces. It's much easier for young children to eat and makes every spoonful more enjoyable.
Serve with warm Calrose rice. My kids love pouring a little soup over their rice and it's their favourite way to enjoy it.

📝 Amanda's Notes

I use dried wakame (seaweed) and soak it until fully softened before cooking.
This soup freezes well if you're using freshly made beef stock. I usually freeze the beef stock separately and cook the seaweed and beef fresh on the day we eat it.
