A quick, comforting family meal that’s ready in under 30 minutes, with juicy chicken and a savoury gravy that’s perfect over rice. Simple, fuss free, mum and kid approved.
For the chicken
* Chicken pieces
* Cooking oil
* Ginger, sliced
* Garlic, minced
* Spring onions, chopped
For the braising sauce
* Water
* Oyster sauce
* Light soy sauce
* Dark soy sauce
* Bay leaves
* Cinnamon stick
* Star anise
* Chicken powder
* Salt
To thicken
* Cornstarch
* Water
For serving
* Spring onions, chopped
1. Heat a little oil in a pot over medium heat. Add the ginger, minced garlic and spring onions. Sauté until fragrant.
2. Add the water, oyster sauce, light soy sauce, dark soy sauce, bay leaves, cinnamon stick, star anise, chicken powder and salt. Stir to combine.
3. Add the chicken and bring the liquid to a simmer. Cover and cook over low heat for about 20–25 minutes, or until the chicken is fully cooked through.
4. Once the chicken is cooked, remove it from the pot immediately. This is important if you prefer chicken that is tender but not overly soft or overcooked.
5. Mix cornstarch with a little water to make a slurry. Add it to the sauce and stir until the gravy thickens.
6. Transfer the chicken to a large serving plate and pour the thickened gravy over it.
7. Finish with chopped spring onions and serve hot with rice.
If your kids don’t like overly soft or tender chicken, keep an eye on the cooking time and remove the chicken as soon as it is fully cooked.
The gravy is also great with rice, my kids love pouring extra gravy over theirs!
Don’t overcook the chicken. My kids actually prefer chicken that still has a little texture, so I take it out as soon as it’s cooked through rather than leaving it in the sauce.
