A comforting one pot chicken meal that gives you two dishes from one chicken, a garlicky chicken soup and tender shredded chicken served with garlic chives and a spicy dipping sauce. Perfect when you want more variety without cooking more dishes.

* Keep the chicken plain If your kids aren’t fans of the dipping sauce, serve some shredded chicken without it.
* Let them choose : Serve the chicken, soup and rice separately so younger kids can choose what they want to eat.
* Garlic : The cooked garlic becomes very soft and mild, making it easy to mash into rice for kids who enjoy garlic.
* Soup : You can serve the broth on its own with rice or noodles if your kids prefer something simpler.
Chicken : You can use a regular whole chicken if kampung chicken isn’t available.
Garlic chives: If you can’t find garlic chives, you can replace them with another vegetable of your choice
Gochujang : If you don’t have gochujang, you can adjust the dipping sauce with a little extra chilli powder and soy sauce.
Chilli flakes : I used regular chilli flakes/chilli powder because I didn’t have gochugaru. If you have gochugaru, you can use that instead.
A simple, comforting Asian style meal made with very basic pantry ingredients. The chicken is tender and shredded into a savoury soy sauce and oyster sauce mixture, then served over spring onion noodles. Perfect for those days when you don’t have many ingredients but still want a proper comfort home cooked meal.
This is one of my favourite ways to turn any leftover meat into a completely new meal.. The roasted meat gives the soup a deep, savoury flavour, while the mustard greens add a delicious balance of sweetness and slight bitterness. It’s a comforting one pot soup that’s perfect for reducing food waste.
A simple, comforting beef seaweed soup made with homemade beef stock, perfect for busy weeknights and always a favourite with my kids.
