Beef Stew with Sweet Potato

A simple one pot beef stew made with tender beef brisket, carrots and whatever I had in the fridge. I didn’t have regular potatoes, so I used sweet potato instead and honestly, it turned out really good! It’s hearty, comforting and very family friendly, especially served with a bowl of rice.

Ingredients

  • Beef brisket
  • 1 large onion
  • A few cloves of garlic
  • 1 carrots, peeled and cut into chunks
  • 1 medium sweet potato, peeled and cut into chunks
  • Tomato sauce
  • Beef seasoning powder
  • Sugar
  • Paprika
  • Onion powder
  • Dried rosemary
  • Bay leaves
  • Salt, to taste
  • Black pepper, to taste
  • Water, enough to partially cover the beef
  • A little cooking oil
  • Cornstarch

Instructions

  1. Sear the beef - Heat a little cooking oil in the pressure cooker. Add the beef brisket and sear until lightly browned. Remove the beef and set aside.
  2. Sauté the aromatics - Using the same pot, sauté the onion and garlic until fragrant.
  3. Add the beef and vegetables- Return the beef to the pot. Add the carrots and sweet potato.
  4. Season - Add the tomato sauce, beef seasoning powder, sugar, salt, black pepper, paprika, onion powder, dried rosemary and bay leaves.
  5. Add water - Pour in enough water to partially cover the ingredients. Give everything a good stir.
  6. Pressure cook - Cover and cook under pressure for 30 minutes.
  7. Release the pressure - Let the pressure release naturally if you have the time.
  8. Thicken the gravy - Mix the cornstarch and water together to make a slurry. Turn the cooker back to sauté/heat mode and slowly stir in the slurry until the gravy thickens to your liking.
  9. Serve - Serve hot with rice, bread or your favourite side. Topped with spring onions

💜 Tips for Kids

If your kids don’t want rice, serve the beef stew with toast or sourdough bread instead. They can dip the bread into the gravy. Or simply eat it with macaroni instead of rice ..

For younger kids : Shred or break the beef into smaller pieces.

I used sweet potato because I didn’t have regular potatoes, but regular potatoes work too.

This is very much a use what you have kind of stew, so feel free to add whatever vegetables you have in the fridge.

If you prefer a thinner gravy, simply use less cornstarch.

I used beef brisket, but other suitable stewing cuts can work too.

My kids ate it happily with rice, and the sweet potato gave the stew a slightly sweeter taste, which they seemed to enjoy.
