A simple one pot braised pork dish made with tender pork shoulder and boiled eggs, cooked in a rich, savoury sweet sauce. It’s one of those family meals that’s easy to prepare, especially on busy days, and the gravy is so good with rice that one bowl is never enough!

For the braised pork
* Pork shoulder, cut into pieces
* Dark soy sauce
* Soy sauce
* Oyster sauce
* Salt
* Bay leaves
* Cinnamon sticks
* Star anise
* Sugar
* Five spice powder
* Boiled eggs
Use the quantities according to your usual recipe.
1. Boil the eggs
Place the eggs in a pot and cover with water. Bring to a boil and cook until hard boiled. Transfer the eggs to cold water, then peel and set aside.
2. Prepare the pork
Cut the pork shoulder into bite sized pieces.
3. Assemble everything
Place the pork into the pressure cooker. Add the dark soy sauce, soy sauce, oyster sauce, salt, bay leaves, cinnamon sticks, star anise, sugar and five spice powder.
Add the peeled boiled eggs and mix everything well so the pork and eggs are coated with the seasoning.
4. Pressure cook
Secure the pressure cooker and cook for 30 minutes.
5. Serve
Once cooked, serve the tender pork and eggs with plenty of the braising gravy over steamed rice.
1. Pork shoulder works really well for kids because it has less fat than pork belly while still becoming tender after pressure cooking.
2. Cut the pork into smaller pieces so they’re easier for little hands and mouths to manage.
3. The boiled eggs are a great addition if your kids love eggs, mine can easily eat 3 to 4 each!
4. Serve with extra rice and gravy if your kids are big rice eaters. My kids usually have two bowls each with this meal!
1. I usually make this with pork belly, but I prefer pork shoulder when I’m cooking for the kids because there is more meat and less fat.
2. Don’t eat pork? You can make this with chicken instead. Chicken thighs would be a good option because they stay tender and work well with the braising sauce.
