A simple, comforting chicken soup meehoon made with homemake chicken soup stock, garlic, ginger and tender chicken. Perfect for an easy family dinner.
For the chicken soup:
• Chicken drumsticks
• Homemade chicken soup stock (I used frozen stock)
• Minced garlic
• A few slices of ginger
• Salt and pepper, to taste
• Water, if needed to adjust the soup quantity or strength
For serving:
• MeeHoon (rice vermicelli)
• Shredded cooked chicken
• Spring onions, chopped
• Coriander, chopped
• Raw onion slices
Ingredient quantities can be adjusted according to the number of servings and your family’s preferences. I don’t measure ingredients in all my cooking. I just eyeball everything.
1. Pan-sear the chicken
Heat a pot and place the chicken drumsticks inside. Let them pan-sear until the skin is lightly charred and golden brown. Remove and set aside.
2. Sauté the garlic
Using the same pot, add the minced garlic and sauté until fragrant.
3. Pour in the chicken soup
Pour in the frozen chicken soup stock, add a few slices of ginger, then return the chicken drumsticks to the pot. Bring to a simmer and cook over low heat for about 16 minutes, or until the chicken is fully cooked.
4. Shred the chicken
Remove the cooked drumsticks from the soup. Once cool enough to handle, remove the meat from the bones and shred it into bite-sized pieces. Set aside for serving.
5. Assemble the noodles
Prepare the meehoon according to the packet instructions and place it in serving bowls. Add the shredded chicken, spring onions, coriander and raw onion slices.
6. Pour and serve
Ladle the hot chicken soup over the noodles and toppings. Serve warm and enjoy!
1. Leave the chicken whole or shred it. You can serve a whole drumstick or remove the meat from the bones and shred it, depending on how your children prefer to eat.
2. Switch up the noodles. If your kids don’t like meehoon, use their favourite noodles instead.
3. Serve it with rice. My eldest actually prefers this chicken soup with plain white rice rather than noodles!
4. Add their favourite vegetables. You can include vegetables your children enjoy to make the meal more suitable for your family.
5. Keep it simple. Even a bowl of chicken soup with white rice can make a lovely, comforting dinner.
I like to keep the seasoning simple with just salt and pepper to taste, especially when cooking for my kids. If you prefer a richer, more savoury flavour, you can add a little chicken bouillon to enhance the taste.
And if you’re short on time or simply don’t feel like pan-searing the chicken, feel free to skip that step! Just add the chicken directly to the soup and simmer until it’s cooked to your preferred tenderness.
My kids don’t like overcooked chicken, so because I already had frozen chicken soup stock ready, I simply simmered the drumsticks in the soup until they were fully cooked, then removed them to shred the meat for the toppings.
There’s no need to make dinner complicated every day. Sometimes, a simple bowl of warm chicken soup noodles is all you need. ❤️
