Cold Mee Sua

A light and refreshing meal that's perfect for warm days or when you want something simple yet satisfying. Made with homemade chicken stock and air fried fish, it's an easy way to turn everyday ingredients into a wholesome family meal.

Ingredients

  • For the Fish :
  • Fish fillets, sliced
  • Salt
  • Black pepper
  • Cornstarch
  • For the Noodles :
  • Mee sua (or any noodles you have)
  • Homemade chicken soup stock
  • Seasoning powder
  • 3 teaspoons light soy sauce
  • Sesame seeds
  • Spring onions, chopped

Instructions

  1. Marinate the fish slices with a little salt, black pepper and cornstarch.
  2. Air fry at 180°C for 20 minutes, or until lightly golden and cooked through.
  3. While the fish is cooking, cook the mee sua according to the packet instructions.
  4. Once cooked, rinse the noodles under cold running water to remove the excess starch. Drain well and place into serving bowls.
  5. In a separate pot, heat the homemade chicken soup stock. Season with a little seasoning powder and 3 teaspoons of light soy sauce.
  6. Top the noodles with the air fried fish slices.
  7. Pour the chicken broth over the noodles.
  8. Finish with sesame seeds and chopped spring onions before serving.

💜 Tips for Kids

Change the fish slices to just one boiled eggs and shredded cucumber if your kid is not a fan of fish.
If your children enjoy cold noodles, can add ice to the noodles and chill the broth before assembling it

This recipe came about because I wanted to make cold soba but only had mee sua at home. Sometimes the best meals come from simply using what you already have. Keeping homemade chicken soup stock in the freezer makes meals like this quick, easy and full of flavour.
