Creamy Avocado Tofu Udon

Creamy, satisfying, and packed with flavour, this avocado tofu sauce coats every strand of udon beautifully. It's a simple meal made with everyday ingredients, perfect for a quick lunch or an easy dinner.

Ingredients

  • 1 packet frozen or fresh udon
  • Luncheon meat (cut into cubes or slices)
  • ½ avocado
  • Less than ½ block soft tofu
  • Tteokbokki sauce (I used this because it's what I had at home! You can substitute with gochujang if you prefer.)
  • Soy sauce
  • Sesame oil
  • Spring onions, chopped

Instructions

  1. Air fry the luncheon meat until golden and crispy.
  2. Blend together the avocado, soft tofu, tteokbokki sauce, soy sauce and sesame oil until smooth.
  3. Cook the udon according to the packet instructions and drain.
  4. Toss the hot udon with the sauce until well coated.
  5. Top with the crispy luncheon meat and spring onions.

You can make this into creamy pasta for your child or if they have diary allergy like my daughter, you can certainly make this non diary creamy noodles

📝 Amanda's Notes

Tteokbokki sauce is a little spicy for children, you can substitute it with miso, or if your child can eat spicy, tteokbokki sauce can be replaced with Gohchujang sauce too
