Ginger & Onion Chicken

A simple, savoury chicken dish simmered with ginger and onion until tender. Made in one pot and perfect with a bowl of hot rice. It’s dangerously addictive!

Ingredients

  • 2 kampung chicken drumsticks
  • 2 kampung chicken thighs
  • Ginger, sliced
  • Onion, sliced
  • Cooking oil
  • Water
  • Oyster sauce
  • Fish sauce
  • Sesame oil
  • Salt
  • Pepper
  • Spring onions

Instructions

  1. Heat a little oil in a pot and sear the chicken for a few minutes. Remove and set aside.
  2. In the same pot, sauté the ginger and onion until fragrant.
  3. Add the chicken back into the pot.
  4. Pour in enough water to come about halfway up the chicken.
  5. Add oyster sauce, fish sauce, sesame oil, salt and pepper.
  6. Cover and let it simmer on low heat for about 20 minutes, or until the chicken is cooked through and tender.
  7. Top with spring onions and serve with hot rice.

💜 Tips for Kids

If you have an odd amount of chicken left in the freezer that isn’t enough for the whole family, this is a great way to turn it into a simple meal for one or two.

The savoury sauce is also perfect with hot rice, which makes it an easy family meal when you do have enough chicken for everyone.

📝 Amanda's Notes

You can substitute kampung chicken with regular chicken pieces. Chicken thighs work especially well because they stay tender when simmered.

If you don’t have fish sauce, you can use a little more soy sauce instead.

You can also substitute spring onions with coriander or simply leave them out.
