Here’s how I cook my version :

1. Heat some oil in a pot. Sauté the chopped onion and garlic until fragrant. Add the bell pepper and paprika. Stir well.

2. Add the rice, homemade chicken stock, salt and ketchup. Give everything a good mix. Cover and cook over low heat for 4 minutes.

3. Add the prawns, clams, squid, edamame and corn on top of the rice. Cover again and cook over low heat for another 5 minutes.

4. Turn off the heat and let everything rest, covered, for 5 minutes.

5. Finish with a squeeze of fresh lemon before serving.

💜 Tips for Kids

1. Adjust the seafood selection according to what your kids enjoy. You can use prawns, octopus, fish or mussels.
2. Cut the squid into smaller, bite sized pieces for easier eating.
3. Remove prawn shells and check clams carefully before serving to younger children.
4. If your children aren't big fans of seafood, set aside some plain rice or mix in their favourite vegetables.

📝 Amanda's Notes

This isn't an authentic paella recipe, just my own version made on a day when I felt like cooking something different without too much fuss!

I love how the seafood gives the rice a naturally sweet and rich flavour. The funny thing? My kids went straight for all the seafood and left most of the rice behind! 😂
