Ingredients

  • Pho spices :
  • Simple herbs I used:
  • star anise
  • cinnamon stick
  • cardamom
  • coriander seeds
  • Ginger
  • Yellow Onion
  • Bowl ingredients 🤍
  • This is what we used to assemble the bowls:
  • any rice noodles of your choice
  • shredded roast chicken
  • sliced onions
  • coriander
  • lime
  • chilli
  • taugeh (bean sprouts)
  • Basil leaves 🍃
  • For the broth:
  • 1 roast chicken (remove meat first, keep bones/carcass)
  • 1 big onion
  • 1 big knob ginger
  • toasted pho spices
  • water

Instructions

  1. Remove all the meat from the roast chicken and keep aside.
  2. Add the bones/carcass into the pressure cooker with 5L of water.
  3. Char the onion and ginger.
  4. Add the charred onion, ginger and spice bag into the pot.
  5. Pressure cook for 50 minutes.
  6. Strain the broth.
  7. Season with rock sugar, chicken powder and fish sauce to taste.
  8. Then pour the hot broth into your prepared bowls 🤍

Get the children to assemble their own bowl. Most fun for them
