Shallot Oil Noodles

These shallot oil noodles are quick, simple and full of savoury flavour from shallot oil, fried shallots and a few pantry sauces. A fuss free noodle dish my kids happily finish.

Ingredients

  • Noodles of your choice
  • Water, for boiling
  • Soy sauce
  • Oyster sauce
  • Black vinegar
  • Shallot oil
  • Fried shallots
  • A little noodle cooking water
  • Spring onions, sliced
  • Note: I usually eyeball the sauces, so adjust the amounts according to how much noodles you’re making and your taste.

Instructions

  1. Cook the noodles : Bring a pot of water to a boil and cook the noodles according to the package instructions, or until they reach your preferred texture.
  2. Make the sauce : While the noodles are cooking, mix together the soy sauce, oyster sauce, black vinegar, shallot oil and fried shallots. Add a little of the hot noodle cooking water and mix well.
  3. Drain the noodles : Once the noodles are cooked, drain them, reserving a little of the cooking water if needed.
  4. Toss everything together : Add the hot noodles to the sauce and mix well until every strand is coated.
  5. Finish with toppings : Add more fried shallots and sprinkle with sliced spring onions.
  6. Serve immediately while the noodles are hot.

💜 Tips for Kids

If you want to make this a more complete meal, serve the noodles with a sunny side up egg for an easy protein boost..

If you have a little more time, you can also add some shredded or sliced chicken on the side.

This keeps the noodles simple while giving you an easy way to add protein when you need it.

I usually eyeball the sauces, so there’s no need to be too precise. Add more soy sauce for saltiness, more shallot oil for fragrance, or more black vinegar if you like a little tang.

You can use any noodles you have at home, this is very much a use what you have kind of meal.

If your kids prefer very simple flavours, start with less to no black vinegar and adjust from there.
