Shredded Soy Sauce Chicken with Scallion Noodles

A simple, comforting Asian style meal made with very basic pantry ingredients. The chicken is tender and shredded into a savoury soy sauce and oyster sauce mixture, then served over spring onion noodles. Perfect for those days when you don’t have many ingredients but still want a proper comfort home cooked meal.

Ingredients

  • For the chicken
  • Chicken thighs
  • Ginger, sliced
  • Spring onions, sliced
  • Soy sauce
  • Oyster sauce
  • Chicken cooking broth
  • Chicken oil/fat from the cooking broth
  • For the spring onion noodles
  • Noodles of your choice
  • Spring onions
  • Butter (use oil if you have)
  • Soy sauce
  • Oyster sauce
  • A little sugar
  • Chicken broth

Instructions

  1. Bring a pot of water to a boil and add the sliced ginger.
  2. Add the chicken and cook until tender, around 25 minutes.
  3. While the chicken is cooking, slice the spring onions and place them in a bowl.
  4. Add soy sauce and oyster sauce to the spring onions.
  5. Add some of the hot chicken broth and chicken oil/fat from the pot. Mix and set aside.
  6. Once the chicken is cooked, remove it from the pot, put into cold water and shred it into small pieces.
  7. Pour the sauce over the shredded chicken and mix well.
  8. For the noodles, melt a little butter (use oil if you have) in a pan and stir fry the spring onions until fragrant.
  9. Mix soy sauce, oyster sauce, chicken broth and a little sugar, set aside
  10. Pour sauce over noodles & toss well.
  11. Serve the noodles topped with the shredded soy sauce chicken

I actually made this while travelling with very limited ingredients, no cooking oil so I used butter instead, no salt or pepper and I couldn’t even find Asian noodles, so I used thin spaghetti! 😂

Sometimes you really don’t need a long list of ingredients to make a comforting family meal. A few simple sauces, ginger, spring onions and chicken can go a long way. 🤍
