A quick, one pan family meal that’s savoury, saucy and packed with tender beef and chewy udon. Perfect for busy days when you want something easy that the whole family will enjoy.
Beef :
* Beef, thinly sliced
* Baking soda
* Garlic, minced
* Soy sauce
Sauce :
* Soy sauce
* Oyster sauce
* Dark soy sauce
* Sugar
* Vinegar
For the udon :
* Frozen udon
* Mushrooms, sliced
* Spring onions
* Sesame oil
* Homemade chicken soup stock or water
* Toasted sesame seeds
1. Marinate the beef
Add baking soda, minced garlic and soy sauce to the sliced beef. Mix well and marinate for at least 20 to 30 minutes.
2. Prepare the sauce
Mix soy sauce, oyster sauce, dark soy sauce, sugar and vinegar together. I usually eyeball everything and adjust the taste as I go.
3. Boil the frozen udon as per instructions on the packaging. Drain and set aside for later use
4. Start cooking
Heat a little sesame oil in a large pan. Add the spring onions and marinated beef. Stir fry until the beef is almost cooked.
5. Add the mushrooms and continue stir frying.
6. Add the stock and sauce
Pour in a small amount of homemade chicken soup stock, followed by the sauce mixture. Mix well.
6. Add the udon
Add the frozen udon and toss everything together until the noodles are heated through and well coated.
7. Finish
Garnish with spring onions and toasted sesame seeds. Serve immediately.
You can easily switch up the protein, chicken, prawns or even fish and add whatever vegetables your kids like. It’s an easy way to make the same one pan meal work for everyone.
Don’t add too much chicken stock! 😂 I accidentally added almost half a bowl when I made mine. It still tasted good, but it made the udon more soupy. If you want it creamier and more saucy, just add a little stock at a time.
Note: I don’t use exact measurements when I cook. I usually eyeball everything and adjust according to taste, so feel free to do the same.
