This easy Bak Kut Teh is full of flavour, comforting, and simple to make. The rich, aromatic soup is always a hit with my kids, making it a great family meal with minimal effort!
Pork bones
Pork ribs
Pork shoulder loin
Pork stomach (optional)
Bak Kut Teh soup spice pack
Water
Mushrooms of your choice
Fresh coriander, for garnish
Minced garlic, for serving
Chilli padi, for serving
1. Blanch the meat for about 10 minutes. Then wash each piece with clean water .
2. Cook the soup base
Add the pork bones, Bak Kut Teh soup spice pack and water to a pressure cooker. Cook under pressure for about 50 minutes, following your pressure cooker’s instructions.
3. Add the remaining meat
Carefully transfer the soup and pork bones to a pot. Add the pork ribs, pork shoulder loin and pork stomach. Simmer over low heat for another 30 minutes, or until the meat is cooked and reaches your preferred tenderness.
I cook the meat this way because my family doesn’t like it overly tender. If you prefer softer, fall off the bone meat, you can add all the meat to the pressure cooker from the beginning and adjust the cooking time according to your pressure cooker’s instructions and the cuts of meat used.
4. Add the mushrooms & salt
When you’re nearly ready to serve, add the mushrooms and simmer until they are cooked through. Salt to taste
5. Garnish and serve
Garnish with fresh coriander. Serve hot with minced garlic and chilli padi on the side, along with rice for a comforting family meal.
1. Choose pork shoulder loin: It’s a leaner option than pork belly, making it a good choice if your kids prefer meat with less fat.
2. Serve pork ribs: My kids love slowly munching on the meat from the ribs! It makes the meal more fun for them.
3. Check for bones: Always supervise young children when eating ribs and make sure they can safely manage the meat and bones.
1. Control the meat texture: I cook the pork bones in the pressure cooker first, then simmer the other cuts separately so the meat doesn’t become too soft.
2. Adjust the soup to your taste: Follow the instructions on your Bak Kut Teh spice pack and adjust the water for a stronger or lighter soup.
3. Add mushrooms near the end: This helps keep them from becoming too soft.
4. If you’re not a fan of pork, change the protein to chicken instead.
