Fishball MeeXian

A simple, comforting bowl of fishball noodles made with homemade anchovy soup, pork slices, fishballs, lettuce and MeeXian.

Ingredients

  • For the anchovy soup - One small rice bowl amount of dried anchovies, 5 small cloves garlic, Oil, 2 large onions & Water
  • For the noodles - MeeXian, Pork slices, Fishballs, lots of them, Lettuce

Instructions

  1. Make the anchovy soup ahead.
  2. Heat a little oil in a pot and sauté the dried anchovies with the garlic until fragrant.
  3. Add 2 large onions and water. Bring to a boil, then lower the heat and let the soup simmer for about 1 hours.
  4. Strain the soup - When you’re ready to cook the noodles, remove the anchovies, garlic and onions from the soup.
  5. Cook the pork & fishballs - Bring the soup back to a boil. Add the pork slices and plenty of fishballs. Let everything cook until the soup comes back to a boil and the fishballs are cooked through.
  6. Prepare the MeeXian - Cook the MeeXian separately according to the package instructions.
  7. Once the fishballs and pork are cooked, add in the lettuce.
  8. Serve - Give everything a quick stir, then ladle the soup, pork, fishballs and lettuce into the bowl of meexian. Serve hot.

💜 Tips for Kids

Cut the fishballs and pork slices into smaller pieces for young children to make them easier and safer to eat.

Substitute :
* MeeXian → rice vermicelli, mee sua or other noodles your kids enjoy.
* Pork slices → chicken slices or minced pork.
* Lettuce → bok choy, choy sum or another leafy vegetable.
